Today was an historic day in that I finally got homemade french fries made correctly! In the past I don't even remember the last time I tried to fry them, tbh. But I used a deep pot, got out my candy thermometer to make sure that the temp was correct, I had my cut fries sitting in a big bowl of cold water for an hour, then blotted them a lot to get the dry. But here's something I had never done before...I sprinkled cornstarch on them! Wow. They crisped up so nicely ?
